How to Make a Bread Sling

Many beginner sourdough recipes tell us to use parchment paper to line the Dutch oven for baking bread.
Early on my sourdough journey, I discovered that parchment paper has many disadvantages.

  • Many brands of parchment paper are not rated for the hot temperatures we need for baking bread
  • The exposed edges of the paper got charred and brittle, so I could not reuse the paper
  • Lowering your bread into a hot banneton with parchment paper can be dangerous

Enter: The bread sling

A bread sling (sometimes called a bread lifter) is a flexible sheet of silicone that covers the bottom of the vessel. The long sides of the sling act as handles that enable us to safely lower the bread into the preheated baking vessel.
